It was used in preindustrial Japan as a disinfectant. Yet these days Shochu is the country's most popular alcoholic tipple. The clear spirit made from either sweet potato, rice or barley has overtaken the better known Saki as the top selling distilled liquor in Japan and helping fuel this Shochu surge is Australian barley which the Japanese regard as the best there is.
