Kombucha Mama’s
Brewing Kombucha takes approximately two weeks. A mixture of water, organic sugar and green and black tea is boiled in a 50-gallon kettle. After it cools, the mixture is placed in pickling crocks with a symbiotic colony of bacteria and yeast, or a SCOBY, which is part of the fungus family.
